At Mountain and Tradition, we take chalet cuisine very seriously. Nothing leaves Chef Raphael's kitchens unless it is sure to impress, using only the best ingredients from our trusted suppliers. But don't take our word for it, and read our Reviews to see how the dishes we serve continue to bring guests back year after year. Each of our catered properties offers a fully-catered package with all-inclusive drinks, plus a chalet host.

Welcome to my kitchen. I'm thrilled that you want to learn about the cuisine we offer here at Mountain and Tradition. I've been lucky enough to travel and work in some of Europe's finest kitchens, including the three gourmet restaurants of the Grand Hotel Kempinski (Geneva) and the double-Michelin Starred Patrick Guilbaud (Dublin). That's where I developed the high standards which we keep in our chalets today. After years producing the finest cuisine, I'm more passionate than ever about using the best seasonal ingredients to produce flavours that the whole group can enjoy.

Respecting the Ingredients

When you start with the right ingredients then there's no need to over-complicate them with too many additions. Just cook them correctly and let the natural flavours of the base ingredients come through.

A Matter of Context

There's a strong tradition in France that the context of the meal matters. The right food for the location, for the venue, for the season. You will find this tradition at the heart of our menus, and it goes without saying that our wines are carefully selected to complement the meals we prepare.

Breakfast

  • Continental Breakfast

    A delicious breakfast buffet comprising of freshly baked baguette with French butter or vegan margarine, pain au chocolat & croissants, yoghurts (natural - local from the fromagerie Fruitiere des Perrieres), chocolate spread, homemade granola, jams and honey, and a basket of fresh fruits (bananas, clementines, apples and lemons).

  • Hot Options

    Available every morning, to fill you up and get you set for the day. French crepes, bacon and eggs (boiled, fried or scrambled), omelette (ham, cheese or plain) or a hearty bowl of porridge.

  • Daily Specials

    Every day of your stay, a different special option is available. Some of our favourites include a fruit smoothie (two days a week), a pineapple plate, the breakfast bruschetta, the classic croque monsieur, or a ham and cheese croissant.

  • Drinks

    Wake up with a freshly brewed proper coffee (Organic Fairetrade coffee by "Café Fraica"), or a selection of teas (Earl grey, Green, Mint & Camomile), plus milk (UHT or plant based), and refreshing apple juice (made in Rhone-Alpes by "Patrick Font").

Afternoon Tea

  • Freshly made Sandwiches

    Served every day of your stay. All our gourmet sandwiches can be adapted to suit vegetarians and vegans, as well as those with intolerances and allergies to wheat, gluten, dairy, eggs, nuts, peanuts and sesame. For allergies please be aware there may still be traces in our dishes as we can not remove these food items from our central kitchen. Soya, fish and shellfish are not used in any of our dishes.

  • Homemade Cakes

    Served every day of your stay. Please note that our freshly made cakes can not be adapted to suit those with special dietary requirements. However, each week, one of our daily cakes will be made to suit vegans and those with intolerances to wheat, gluten, dairy and eggs.

    Nuggets and chips with real chicken and real potatoes! Salad of cucumber and tomatoes

    Day 2

    Spaghetti Bolognaise

    Day 3

    Roast chicken, homemade gravy, baby potatoes and broccolis

    Les Gets made saussage, battered or not, homemade chips and mushy peas

    Baked macaroni cheese, cheesy cream sauce

    Starter

    Cream of parsnip and Espelette AOP chilli soup.

    Main Course

    Traditional Burgundy beef, cooked low and slow for 6 hours in a rich red wine sauce. Served with glazed carrots and mushrooms. Baked polenta with fresh spinach and "Saveur des Gets" (a cheese made 100% in Les Gets).

    Alternative option

    Tuscan style gnudi with glazed carrots, fresh spinach and "Saveur des Gets" (a cheese made 100% in Les Gets).

    Dessert

    Lemon and meringue pie, upside down, moist and crunchy textures.

    Organic and local betroots, roasted in cider vinegar, crispy Les Gets goat cheese spring roll, Piemonte hazelnuts.

    Main Course

    Filet of french Duck, sweet and sour jus, braised red cabbage with hazelnuts, raisin and oranges, dauphinoise potatoes.

    Alternative option

    Organic black beluga lentils and mushroom meatballs, sweet and sour jus, braised red cabbage with hazelnuts, raisin and oranges, dauphinoise potatoes.

    Dessert

    Traditional apple crumble, served with a home-made vanilla ice cream.

    Starter

    Cream of pumpkin, curry and coconut soup.

    Main Course

    Whole Lamb shoulder “Label Rouge” roasted "Marrakesh Tajine style" with chickpeas and winter vegetables and served with "Ras El Hanout" scented couscous.

    Alternative option

    Caramelised winter vegetable and chickpeas cooked in a Tajine broth, and served with "Ras El Hanout" scented couscous.

    Dessert

    Hot chocolate mousse, very fluffy, with raspberry sorbet.

    Baked Vacherin Cheese with potatoes, saucisson 100% Haute-Savoie and pickles.

    Main Course

    Risotto verde with Crozets and white cocobeans, braised chards in butter, piedmont hazelnuts roasted and in foam.

    Alternative option

    Pork cheek from "La ferme de Challonge" braised slow and low, risotto verde with Crozets, braised chards in butter.

    Dessert

    Two big profiteroles with vanilla ice cream and chocolate sauce.

    Black winter truffle and smoked raclette arancini, with truffle mayo.

    Main Course

    Roasted chicken supreme with buttered Savoy cabbage, confit mushrooms and a creamy piquillos pepper sauce. Served with rapins, the must in Les Gets.

    Alternative option

    Stuffed cabbage with mushroom and red peppers and a creamy piquillos pepper sauce. Served with rapins, the must in Les Gets.

    Dessert

How Main Course Options Work?

For our evening meal, we offer a main course as well as an alternative option - one including meat, and the other vegetarian.

If you are vegetarian or vegan please just let us know before your holiday and we'll make sure we prepare the correct option for you. You can also find out more about dietary requirements here.

Please note: unless we hear otherwise, we generally prepare the main course as described above for everyone - as part of a flexitarian diet (which consists of four main courses including meat and one vegetarian). You can choose the alternative option, although it's not possible to pick once sitting at the table.

Fancy some more meat-free nights? More choice for you!

Many people are now opting to enjoy some meat-free nights during their stay. Sometimes with environmental concerns, sometimes for health reasons, and sometimes just for the variety and getting to enjoy new and different dishes. Whatever your motivation, you are very welcome to have the main course of the day some nights and the alternative option on others.

Reducing food waste

If it's possible to let us know your choices before your holiday that would be very much appreciated. As part of our drive to reduce our carbon footprint and protect the environment we are very conscious to reduce food waste as much as possible. For Children:

Normally we prepare the children's option for those aged 12 and below, and the adults option for those aged 13 and above. If your children would rather have the other option though that's no problem at all. Please just let us know before your holiday. Thank you.

Drinks

  • Wines

    All-inclusive wine in all of our chalets and apartments. Languedoc House Wine HVE ("High Environmental Value"), white, red and rose, sourced from our trusted local supplier.

  • Beer

    All-inclusive lager in all of our chalets and apartments. Kronenbourg Red (4.2% abv.) is a popular all-rounder.

  • Soft Drinks

    Throughout your stay, enjoy all-inclusive fruit juice, as well as sparkling water, tonic water and soft drinks, all made via the soda stream (with syrups).

Dietary Requirements

At Mountain and Tradition, we take your dietary requirements very seriously and we try to make sure that all our guests are well catered for. While we try to make sure that every dish is sure to impress, please be aware that we do not have the same degree of flexiblity that you might expect in a restaurant. Use this section to get a sense of how we adapt our standard menus to suit the following needs.

Food intolerances and allergies

Our menus can be adapted to suit those with intolerances and allergies to wheat, gluten, dairy, eggs, nuts, peanuts and sesame. For allergies please be aware there may still be traces in our dishes as we can not remove these food items from our central kitchen. Soya, fish and shellfish are not used in any of our dishes. If you have a dietary need which you think we should know about, please let us know at the time of booking.

I'm a vegetarian. What can I expect?

All our meals have vegetarian options available. You can see many of them listed as "alternative options" in our evening meal menus. Our vegetarian dishes present a twist on the French classics, mouth-watering pies and hearty stews. If you're not a vegetarian but just fancy some meat-free nights just let us know, it's not a problem at all.

I'm a vegan. What can I expect?

Our vegetarian menu can be adapted to suit vegans. Let us know your requirements when you book and we will make sure there are plant-based options at every meal sitting of your stay. However, please be aware that our vegan menu is less flexible and less varied than our other menus.
